If you’ve never had crispy, golden, perfectly seasoned breakfast potatoes, you’re in for a treat. These potatoes are so addictive you’ll wonder why you ever settled for anything less. And here’s the best part — they’re made effortlessly in the air fryer.
Welcome back to our kitchen, where we share delicious, family-friendly recipes. Today, I’ll show you how to elevate breakfast potatoes from just good to absolute wow. Let’s get cooking!
Step 1: Prep the Potatoes
Start with 450g (1 lb) of floury potatoes, peeled and cut into 1-inch chunks. I’m using Rooster potatoes, but Maris Piper or Russet potatoes work beautifully too.
Seasoning the Potatoes:
Drizzle with 2 tablespoons of oil and sprinkle on:
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
Toss everything together until the potatoes are well-coated.
Step 2: Air Fry the Potatoes
Transfer the seasoned potatoes to the air fryer basket. Cook at 200°C (400°F) for 10 minutes using the air fry setting.
Pro Tip: Don’t wash the bowl you used for seasoning the potatoes — we’ll use it for the veggies next!
Step 3: Prep the Vegetables
Grab:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
Add them to the same bowl and toss them in the leftover seasoning and oil.
Step 4: Finish Cooking in the Air Fryer
After 10 minutes, give the air fryer basket a good shake to flip the potatoes. Add the seasoned vegetables to the basket and shake again to mix everything.
Air fry for another 10 minutes, shaking halfway through.
Serving Suggestions:
