Keto Fried Chicken

Crispy, golden perfection—this keto fried chicken is just as crunchy as the real thing, thanks to a secret ingredient: crushed pork rinds.

Ingredients

  • 2 lbs chicken thighs or drumsticks
  • 2 eggs
  • 1 cup crushed pork rinds (or almond flour)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup avocado oil (for frying)

Instructions

  1. Heat avocado oil in a frying pan over medium-high heat.
  2. Whisk eggs in one bowl and mix pork rinds, Parmesan, garlic powder, paprika, salt, and pepper in another.
  3. Dip each chicken piece into the egg, then coat with the pork rind mixture.
  4. Fry for 5-7 minutes per side until golden brown and fully cooked.
  5. Drain on paper towels and serve hot.
