Keto Meatloaf

A juicy and flavorful meatloaf made without breadcrumbs—perfect for a filling keto meal!

Ingredients

  • 1 lb ground beef
  • ½ cup crushed pork rinds (or almond flour)
  • 1 egg
  • ½ cup shredded cheddar cheese
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

For the Keto Glaze (optional):

  • ¼ cup sugar-free ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground beef, pork rinds, egg, cheddar cheese, Worcestershire sauce, garlic powder, salt, and pepper.
  3. Shape into a loaf and place in a greased baking dish.
  4. If using the glaze, mix sugar-free ketchup, vinegar, and mustard. Spread over the top of the meatloaf.
  5. Bake for 35-40 minutes or until fully cooked. Let rest for 5 minutes before slicing.
