A juicy and flavorful meatloaf made without breadcrumbs—perfect for a filling keto meal!
Ingredients
- 1 lb ground beef
- ½ cup crushed pork rinds (or almond flour)
- 1 egg
- ½ cup shredded cheddar cheese
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
For the Keto Glaze (optional):
- ¼ cup sugar-free ketchup
- 1 tbsp apple cider vinegar
- 1 tsp mustard
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix ground beef, pork rinds, egg, cheddar cheese, Worcestershire sauce, garlic powder, salt, and pepper.
- Shape into a loaf and place in a greased baking dish.
- If using the glaze, mix sugar-free ketchup, vinegar, and mustard. Spread over the top of the meatloaf.
- Bake for 35-40 minutes or until fully cooked. Let rest for 5 minutes before slicing.
