Ingredients

  • Chicken: 3 chicken breasts (or thighs), butterflied and seasoned
  • Sun-dried Tomato Oil: 3 tablespoons (or olive oil)
  • Unsalted Butter: 2 tablespoons
  • Brown/Yellow Onion: 1, diced
  • Garlic: 5 cloves, minced or grated
  • White Wine/Chicken Stock: ⅓ cup (for deglazing)
  • Dijon Mustard: 1 ½ tablespoons
  • Chicken Stock: ¾ cup (for the sauce base)
  • Heavy Cream: 1 cup (also known as heavy whipping cream)
  • Sun-dried Tomatoes: ½ cup, sliced
  • Dried Chili Flakes: ½ teaspoon (optional)
  • Parmesan Cheese: Freshly grated, to taste (start with ⅓ cup, then adjust)
  • Fresh Herbs:
    • Thyme: 1 teaspoon, chopped (or 1 tablespoon fresh)
    • Oregano: 1 teaspoon, chopped (or 1 tablespoon fresh)
    • Basil: ½ cup, roughly torn (optional)

Instructions
Prepare Ingredients:

  1. Dice the onion and mince the garlic.
    Butterfly the chicken breasts and slice into fillets. Season generously with salt, pepper, and olive oil.
    Sear Chicken:
  2. Heat a large, high-rimmed pan over medium-high heat with sun-dried tomato oil.
    Sear the chicken for 3–4 minutes on each side until golden. Set aside.
    Cook the Aromatics:
  3. Add butter to the pan, then sauté the onions with a pinch of salt until translucent.
    Stir in garlic and cook for 45 seconds.
    Deglaze the Pan:
  4. Pour in white wine (or chicken stock), bring to a boil, and reduce for 1 minute.
    Make the Sauce:
  5. Add Dijon mustard, chicken stock, and heavy cream. Mix well.
    Stir in sun-dried tomatoes, chili flakes (optional), and Parmesan cheese. Simmer for 6–7 minutes until thickened.
    Finish the Dish:
  6. Add fresh thyme, oregano, and basil for a fragrant infusion.
    Return the chicken to the pan with any juices, coating it in the sauce. Simmer for 1–2 minutes.
